Ingredients: 2 cups almond flour. 1/2 cup coconut sugar. 1/4 teaspoon salt. 1/4 cup melted coconut oil. 2 tablespoons fresh lemon juice. 1 tablespoon lemon zest. 1 teaspoon vanilla extract.
Instructions: Preheat oven to 350F 175C. In a bowl, mix almond flour, coconut sugar, and salt. Add melted coconut oil, lemon juice, lemon zest, and vanilla extract. Mix until dough forms. Roll dough into small balls and place them on a baking sheet lined with parchment paper. Flatten each ball with the palm of your hand or the bottom of a glass. Bake for 10-12 minutes or until the edges are golden brown. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
