This refreshing tart combines the crispness of cucumber with the freshness of cilantro, all nestled in a flaky pie crust and topped with gooey melted cheese.
Ingredients: 1 refrigerated pie crust. 2 cucumbers, thinly sliced. 1/2 cup chopped cilantro. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1/2 cup mayonnaise. 2 cloves garlic, minced. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. Place the pie crust into a tart pan, pressing it into the bottom and up the sides. In a bowl, mix together mayonnaise, garlic, salt, and pepper. Spread the mayonnaise mixture over the bottom of the pie crust. Arrange cucumber slices on top of the mayonnaise mixture. Sprinkle chopped cilantro over the cucumbers. Top with shredded mozzarella and grated Parmesan cheese. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the cheese is melted and bubbly. Let it cool slightly before slicing. Serve warm and enjoy!
