For 147 years, Tabasco Sauce has been made on Avery Island, Louisiana using essentially the same ingredients and process. Tabasco peppers are mashed with a bit of salt, and aged for up to three years, then strained and mixed with high quality vinegar for up to 28 days before being bottled.
