Flavorful grilled salmon sandwiches with a Basil Dill Sauce that are great for a barbecue or a quick and easy meal.
Ingredients: 4 salmon fillets. 4 whole wheat buns. 1 cup cherry tomatoes, halved. 1 cup arugula. 1 tablespoon olive oil. Salt and pepper to taste. For the Basil Dill Sauce:. 1/2 cup mayonnaise. 1/4 cup fresh basil leaves, chopped. 2 tablespoons fresh dill, chopped. 1 clove garlic, minced. 1 tablespoon lemon juice. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. Add salt and pepper to the salmon fillets and brush them with olive oil. Salmon should be cooked all the way through after being grilled for 4 to 5 minutes on each side. To make the Basil Dill Sauce, put mayonnaise, garlic, lemon juice, salt, and pepper in a bowl and mix them together. Toast the whole wheat buns for one to two minutes on the grill after cutting them in half. On the bottom half of each bun, spread a lot of Basil Dill Sauce. Place grilled salmon fillets on the bun with the sauce. Then, add arugula and cherry tomatoes that have been cut in half. Add the top half of the bun to finish the sandwich. Serve right away and enjoy!
