This recipe for grilled octopus with chorizo combines the flavors of soft octopus with spicy chorizo to make a dish that is full of Mediterranean flavors. For a summer barbecue or a fancy dinner, it's perfect.
Ingredients: 1 large octopus about 2 pounds, cleaned and tentacles separated. 200g chorizo sausage, sliced. 1 lemon, juiced. 4 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. Fresh parsley, chopped, for garnish.
Instructions: Preheat grill to medium-high heat. In a bowl, mix lemon juice, minced garlic, olive oil, salt, and pepper. Brush the octopus and chorizo slices with the lemon-garlic marinade. Place octopus and chorizo slices on the grill, cook for about 5-7 minutes on each side until octopus is charred and tender, and chorizo is cooked through. Remove from grill and garnish with fresh parsley. Serve hot and enjoy!
