Thai green coconut soup This recipe uses loads of greens so it’s a super delicious way of getting all your goodness into one bowl. @bowtees has a birthday celebration today and has told me he loves Thai green curry, so whilst the chilly winds (and hail) have whooshed through this morning, this will warm you right up. Take a look at Bowtees t-shirts they are super cool and Edward loves to wear them (and they wash really well!). For this recipe: Coconut oil in large saucepan Add chopped red onion and stalks from all your greens- cabbages, broccoli and celery are in mine. Sauté until softened and add a generous amount of Thai curry paste- I’ve used four tablespoons in here. Stir for a further minute, add two tins of coconut milk and two cups of water (or one tin and chicken stock if you like a lighter soup). Bring to a simmer and cook until the vegetables are soft. Add a good splash of fish sauce to taste and season well (I added chilli flakes). Add the chopped leaves and simmer again until wilted.
