A quick and flavorful Thai-inspired soup perfect for busy weeknights. This creamy coconut curry soup is packed with vegetables and aromatic spices, making it a satisfying and comforting meal.
Ingredients: 1 tbsp olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 red bell pepper, sliced. 1 carrot, sliced. 2 tbsp Thai red curry paste. 4 cups vegetable broth. 1 can 14 oz coconut milk. 1 tbsp soy sauce. 1 tbsp brown sugar. 1 lime, juiced. Salt and pepper to taste. Fresh cilantro, chopped for garnish. Cooked rice or noodles optional, for serving.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Cook until softened. Stir in red bell pepper and sliced carrot. Cook for 2-3 minutes. Add Thai red curry paste and cook for another minute. Pour in vegetable broth and coconut milk. Stir well. Season with soy sauce, brown sugar, lime juice, salt, and pepper. Bring the soup to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld together. Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro. Optionally, serve over cooked rice or noodles.

Ingredients: 1 lb ground turkey. 1/2 cup almond flour. 1/4 cup coconut aminos. 2 tbsp fish sauce. 1 tbsp minced lemongrass. 1 tbsp minced ginger. 2 cloves garlic, minced. 1 can 14 oz coconut milk. 4 cups chicken broth. 1 cup sliced shiitake mushrooms. 2 cups baby spinach. 2 tbsp coconut oil. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Gluten-free flour, coconut aminos, fish sauce, lemongrass, ginger, and garlic should all be mixed together in a bowl. Make meatballs out of it. Put coconut oil in a big pot and heat it over medium-low heat. Put in the meatballs and cook them until all sides are browned. Add the chicken broth and coconut milk. Bring to a low boil. Turn down the heat and add the shiitake mushrooms. Simmer for 10 to 15 minutes or until the meatballs are fully cooked. Add baby spinach and stir until it wilts. Add pepper and salt to taste.
