Tonight! Rock-n-Roll Magic
Naming our house cocktails is always fun around here. We create a drink then talk about what it evokes - words, themes, people, songs, books, movies, places. Having changed our house cocktail list six times in the 15 months we've been open, we're getting pretty good at the process. Sometimes however, drinks are made around a name. Months before we opened, we discovered Rose and Harry Zarem were former owners of the building that now houses The Sparetime. Their son Bobby told us stories about running around the place when he was a boy. To honor the past as well as a living local legend, we knew that one day there would be, "The Rose Zarem." Last summer, when cucumbers were abundant at Forsyth Farmers' Market, Jane started using them to infuse vodka. It turned out really well and when added to fresh lemon juice and simple syrup, served over ice, topped with seltzer and just a few drops of potent rosewater, we knew we had a refreshing and delicious cocktail as well as the one that fit the name. We make a lot of cocktails that are more esoteric and interesting, but The Rose Zarem has the best story and hasn't come off the menu since we put it on - we wouldn't dare.
