...Ooh! I actually have answers to all of these...
Most of the team is still mammalian, and so their physiology doesn't change much aside from the obvious, but a few do have interesting medical anomalies...for example, the heavy has multiple stomachs. I had to do a lot of research into different animal species to, well, keep my job after dooming the whole team to a lifelong curse, and it turns out that's something pretty typical to cattle! Isn't that interesting?
And don't even get me started on the pyro... He's a magical species, as a dragon, so I still know next to nothing about his biology even after slicing him open to see. His scales are fireproof, he seems to be immune to the effects of smoke inhalation, and don't get me started on the fire breathing. He has this sac of fluid in his throat that fills up, similar to kerosene, which he can shoot from his mouth and ignite--via another system I don't quite grasp yet, but it LOOKS like he's just clicking his tongue. I can't wrangle him for long enough to really inspect him usually, so it's still a hole in my knowledge.
As for the meat...I've found that it depends on what area of the body you're looking at... I've had the opportunity to cut myself open a few times, and it's almost...marbled? I don't know if that makes much sense. To be fair neither does a curse that makes you an animal except on full moons.. Obviously all of the fully bird parts are white meat. More human anatomy is red meat. I don't understand it, but considering I've retained my regular levels of mobility I'm not arguing with it.
Also if you ever get near me with any sharp implement I reserve my right to shoot you in the head.
