Pesto!!!
Pesto is super exciting and versatile to use in any cheap recipie. It’s clean, fresh and sharp and can be used in just about anything to make a delicious and healthy meal. Here are a few of my tips for using Pesto while flatting:
1. With Potatoes. Boil new potatoes or quarter 4 washed potatoes with red skins and boil them in salted water until cooked and fluffy. Drain in a collider and toss with three tablespoons of pesto. Add more Parmesan for a cheesy finish and season well.
2. With pasta. Cook penne pasta to al dente in salted water, drain and toss in 3 tablespoons of pesto. Serve with chopped olives, Parmesan and season well.
3. On toast. Toast two rounds of strong, multi grain brown bread and spread over a layer of pesto. This goes well with ham or avocado for a delicious and easy dinner. Dot with olive oil and a splash of tart vinegar.
4. On a Pizza. Spread the base of your next pizza with pesto for a lively zing, or alternatively make small balls of pesto using teaspoons and dot these around the pizza before baking in the oven.
5. As a salad dressing. Whisk pesto with juice of half a lemon, a tablespoon of olive oil, mustard and pepper and toss through baby coss, cucumber and spinach for a delicious salad.
