For this year's birthday breakfast for my sister and me, I made one of my favorite springtime/summer treats: Lemon poppyseed muffins! I got this recipe from Binging with Babish, and it's inspired by the "Seinfeld" episode "The Muffin Tops", where Elaine gets involved with selling just the top part of the muffins, which are the best part. Lemon Poppyseed Muffins For the Muffins: 2 3/4 cups (12 oz.) flour 1/4 t. salt 1/2 t. baking soda 1 T. baking powder 3 T. poppyseeds 1 cup (7 oz.) sugar 10 T. melted butter 2 eggs The zest and juice of one lemon 1 1/2 cups (12 oz.) buttermilk For the Lemon Glaze: The juice of one lemon 1/2 cup (1.3 oz.) powdered sugar Preheat the oven to 375 degrees F (190 degrees C). Line a muffin tin with paper cups. In a bowl, combine the flour, salt, baking soda, and baking powder. Add in the poppyseeds. In another bowl, beat the sugar and melted butter into a light, fluffy paste. Add the eggs, one at a time, beating after each addition. Add the lemon zest and juice and stir to incorporate. Add half the dry ingredients. Add half the buttermilk. Repeat with remaining dry ingredients and buttermilk. Ladle the batter into the muffin tin. Bake the muffins for 20-25 minutes. While the muffins bake, combine the lemon juice and powdered sugar to form a spreadable glaze.
