The first time I made puff pastry it was a disaster. So were the next four or five times 🤔 I came in making my first dough, thinking "I got this, bish", only to find out my butter melted too fast, or that my palms were too warm. All the layers were stuck together, and after baking the pastry looked something like a soda cookie/biscuit 😒 - You know what helps? Lard! that's right!!! A mixture of lard and butter helped a great great deal in making a fluffy and layered puff pastry, leading to my first successful batch of egg tarts. Of course when you're skilled enough you start to leave lard out and use just butter, and certainly it tastes way better. Yours truly here ain't got no time for that. I prefer going out to a local bakery and grab my croissant. And by local, it has to be @duo_patisserie. As a reminder of context, I used to bus all the way from midtown to Markham at 7am on a Sunday to grab their croissant 😌 (yea, hmmm, it's true) - The only thing that's even better than a freshly baked simply butter croissant is a croissandwich. That's a real word! I happen to find the beautiful and delicious thing at @lightcafecanada where, a nutritionist friend of mine @day_nayoung works as an awesome barista. I thought this place was just a hype with all the cotton candy and coffee thing all over social media, but their food was actually great!
