Ingredients: 1 cup almond flour. 1/4 cup unsweetened cocoa powder. 1/4 cup powdered erythritol or preferred keto sweetener. 1/4 teaspoon peppermint extract. 1/4 cup coconut oil, melted. 1/4 teaspoon vanilla extract. Pinch of salt. 1 tablespoon unsweetened almond milk if needed. Sugar-free dark chocolate chips for topping optional.
Instructions: Prepare the oven by heating it up to 325F 165C. Put almond flour, cocoa powder, erythritol powder, peppermint extract, melted coconut oil, vanilla extract, and a pinch of salt in a bowl. Mix the ingredients together. Mix everything together well. It can be too dry, so add a tablespoon of unsweetened almond milk to help it stick together. Place the mix on a baking sheet that has parchment paper on it. To make it crisp, bake for 10 to 12 minutes and stir it around halfway through. Take it out of the oven and let it cool all the way down. As it cools, it will get crisper. If you want, you can add sugar-free dark chocolate chips to the cereal after it has cooled down. Keep at room temperature in a container that won't let air in.
