Could I block a creature with one of my creatures, and during the end of combat phase play Cloudshift to exile that creatureto keep it from dying? Or would i have to use something like Unsummon?
Cloudshift or Unsummon will both work, but the end of combat step is too late to do it. If you’re going to remove your creature from combat to save it from combat damage, you need to do so before combat damage is dealt.
Note that this also means the creature won’t deal any combat damage, either. Unless first/double strike is involved (so that there are two damage steps), there’s no way to have your creature deal combat damage but leave combat before receiving combat damage. Combat damage is dealt all at once.

Alright so I have a Nivix Cyclops, and I cast Fling. Because of its ability do I fling for four damage or for one damage? This seems like a tricky "stack priority" question that my friends don't understand
Fling requires you to sacrifice a creature as part of its cost. This means you must sacrifice the creature as you cast Fling (at the same time pay Fling’s other costs).
When Fling resolves, it will use last known information to see what the sacrificed creature’s power was at the time it was sacrificed. The Cyclops’ trigger will not change anything.
If I activated Duskmantle Guildmage's first ability, then played Mind Sculpt, would my opponent lose one life or seven life?
Seven. The Guildmage’s ability sets up a delayed triggered ability which will trigger each time a card is put into an opponent’s graveyard that turn. Mind Sculpt will cause that trigger to trigger seven times.
It’s also worth noting that each instance of the triggered ability will resolve separately, and that players can respond in between each one.
Will Illusionist's Bracers allow for extra +1/+1 counters with Evolve creatures? As in when a creature equipped with Illusionist's Bracers evolves, since evolve isn't a mana ability and all, would I get an extra counter? And if that works, would I be able to move that new counter to another creature? I really would like to run this card in my Simic deck
I'm afraid not. Illusionist's Bracers specifically says "Whenever an ability of equipped creature is activated," and only activated abilities can be activated. (Activated abilities are written in the form "[Cost]: [Effect].")
Evolve is an example of triggered ability, which is different from an activated ability. Evolve doesn't have a cost you can pay to activate it at will. Instead, it has an event (the part that starts with 'Whenever') which makes it automatically trigger. Triggered abilities always begin with the words "When," "Whenever" or "At."

Hypothetically, if Illusionist's Bracers said, "Whenever an ability of equipped creature triggers," it would affect things like evolve.
However, since evolve doesn't target a creature to put the +1/+1 counter on (it just puts it on the creature with evolve), copying the triggered ability still wouldn't allow you to move the +1/+1 counter to a different creature.
