Who doesn’t like a nice warm bowl of chili?! ▫️ We whipped up this super simple comfort dish last night in under 1️⃣5️⃣ minutes with plenty of leftovers for lunch! ▫️ Hope you enjoy! 👉🏻1 pound ground lamb (or any protein you prefer) 👉🏻1 yellow onion 👉🏻1 bell pepper (your choice- I prefer red, yellow and orange) 👉🏻½ cup chopped carrot 👉🏻2 celery stalks chopped 👉🏻2 Anaheim chilies (*roasted and diced) OR 1 can diced green chili 👉🏻6 whole roma tomatoes (*peeled and chopped) or 1- 14.5oz can of diced tomatoes 👉🏻2-3 cups of diced (1” x 1”) butternut squash (you can also use sweet potatoes or red potatoes or a combination of both) 👉🏻1 small can tomato paste 👉🏻2 cup beef broth or chicken broth 👉🏻1 tsp paprika 👉🏻1 tsp chili spices 👉🏻2 tsp cumin 👉🏻2 tsp minced garlic 👉🏻Salt and pepper to taste ▫️ Directions: Saute small dice onion, minced garlic, celery, carrots, and anaheim chilies, in coconut oil, once translucent add your ground beef and brown, add peeled and chopped tomatoes and tomato paste. Add the beef/chicken broth and all your spices and bring to a simmer. Finish with diced butternut squash and cook till tender, finish with salt and pepper and a squeeze of lime.
