Kupus i Tjesto (Croatian Cabbage and Pasta)
You will not believe how addictive this dish is. Very few ingredients but oh so good!
Ingredients:
1/2 a kilogram of plain flour
1 tablespoon of salt
2 eggs (lightly beaten)
cold water
1/2 head of medium cabbage thinly sliced
salt and pepper
Sunflower Oil
Sift flour and salt into a large bowl. Pour in eggs and 1/2 a cup of water and mix together with a butter knife.
Using your hands knead mixture, adding more water until the mixture comes together and is soft but not sticky. Divide dough into around 5 pieces and roll each out on a large cloth. If you have a pasta machine run each piece through otherwise you will need to roll each piece out quite thin (think lasagna sheet thin).
Cut out squares around 2.5 centimeters ( a pizza cutter comes in handy for this). They don’t have to be perfect squares, just run the pizza cutter horizontally and vertically across the pasta sheets.
Separate the squares and leave aside.
Heat oil in a large pot over medium/high heat. Add in cabbage, pepper and salt to taste. Cover and stir occasionally until cabbage is cooked though. Leave aside.
Bring a large pot of water to boil. Gently add in the pasta squares and boil, stirring occasionally, until cooked through.
Drain, return to pot and add in cooked cabbage, a little more sunflower oil and more salt and pepper, if needed, and stir over low/medium heat until all mixed together well. (Taste test to make sure there is enough seasoning).
Can be served on its own or with Ćevapčići or other meat.
