The slow cooker makes it easy to make a tasty and creamy Tuscan chicken dish. Tender chicken breasts cooked with cream, herbs, tomatoes, and tomatoes for a hearty meal.
Ingredients: 4 boneless, skinless chicken breasts. 1 tablespoon olive oil. 1 onion, chopped. 4 cloves garlic, minced. 1 can 14 ounces diced tomatoes, drained. 1 cup chicken broth. 1/2 cup heavy cream. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon dried thyme. Salt and pepper to taste. Fresh basil leaves, for garnish optional. Grated Parmesan cheese, for garnish optional.
Instructions: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Brown chicken breasts on both sides, about 3 minutes per side. Transfer chicken to slow cooker. In the same skillet, add chopped onion and garlic. Saut until onion is translucent, about 3 minutes. Transfer onion and garlic to slow cooker. Add diced tomatoes, chicken broth, heavy cream, dried oregano, dried basil, and dried thyme to slow cooker. Stir to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender. Serve chicken and sauce over cooked pasta or rice. Garnish with fresh basil leaves and grated Parmesan cheese if desired. Enjoy!
