This is a tasty and healthy quinoa dish that has the bright flavors of tomatoes and basil.
Ingredients: 1 cup quinoa. 2 cups water. 1 tablespoon olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1/2 cup fresh basil, chopped. Salt and pepper to taste. Grated Parmesan cheese for garnish.
Instructions: Use cold water to rinse the quinoa. Mix quinoa and water in a saucepan. Bring to a boil, then lower the heat, cover, and let it simmer for 15 minutes, or until the quinoa is soft and the water is absorbed. Put olive oil in a pan and heat it over medium-low heat. When you add the chopped onion and garlic, cook them until they get soft. Put diced tomatoes in the pan and cook for 5 minutes. Add the cooked quinoa and chopped basil and mix well. Add pepper and salt to taste. Allow the flavors to blend for another 5 minutes by simmering. Grate some Parmesan cheese on top and serve hot. Have fun with your Tomato Basil Quinoa!
