Ingredients: 2 cups fresh spinach leaves. 1 cup cherry tomatoes, halved. 1/2 cucumber, thinly sliced. 1/4 red onion, thinly sliced. 1/4 cup Kalamata olives. 4 oz grilled wild-caught salmon, flaked. 2 tbsp extra virgin olive oil. 1 tbsp balsamic vinegar. Salt and pepper to taste. 1 tbsp chopped fresh basil leaves. 1 tbsp chopped fresh parsley leaves.
Instructions: Toss together the cucumber, red onion, cherry tomatoes, fresh spinach, and Kalamata olives in a large salad bowl. Top the salad with the grilled salmon flakes.
