Ingredients: 2 lbs pork shoulder, boneless. 1 onion, chopped. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1 can 4 oz green chilies. 1 tsp cumin powder. 1 tsp chili powder. 1/2 tsp paprika. Salt and pepper to taste. 12 small flour tortillas. Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa.
Instructions: Put the pork shoulder in the crock pot. Cut up the onion, mince the garlic, dice the tomatoes, add the green chilies, cumin powder, chili powder, paprika, salt, and pepper. Mix everything together in a bowl. Put this on top of the pork shoulder. Put the lid on top of the slow cooker and set it to low. Cook for 6 to 8 hours, or until the pork is soft and can be easily shred with a fork. Take the pork out of the slow cooker when it's done and shred it with two forks. Put the pork shreds back in the slow cooker and mix them with the cooking juices. You can heat the flour tortillas up in a pan or the microwave. Place some of the shredded pork mixture on a tortilla. Then add diced tomatoes, sour cream, salsa, shredded lettuce, and more shredded cheese. Put the filling on top of the tortilla and fold it over. Serve right away.
