When I was a kid, I was a big fan of the Tracker bar - nutty, chewy, chocolatey - what was there not to like? The Tracker bars big claim to fame is apparently being the world’s first ever cereal bar. Curious, I perused the cereal bar aisle at the supermarket yesterday and discovered the main ingredient in the humble Tracker bar is not oats or nuts or any of the stuff pictured on the box, but glucose syrup. Meanwhile Nature Valley granola bars (which have grass on the box and grass = healthy in the advertising world, right?) boast between 12 and 14 grams of sugar. It’s hardly Mars Bar territory (34.6g FYI) but it's worth bearing in mind when it's so bloody easy to make your own!
You guessed it, I've been making granola bars! The best recipe I’ve found is courtesy of Gwyneth Paltrow. Whatever your opinion of Mrs Chris Martin, all the recipes of hers I've tried so far have been quite delicious. I’m under no illusions she comes up with them alone, and I could happily do without quite so many photos of her on the pages of her cookery books BUT the woman clearly knows food so we'll let her off for now.

I’ve made a few batches and mucked around with the ingredients. If you’re out of maple syrup, agave nectar works perfectly fine (and in my case resulted in a firmer bar). To warn you, I couldn’t find brown rice syrup anywhere in the supermarket and ended up having to buy a job-lot off Amazon. Fruit and nuts-wise I’ve tried raisins, dried cherries, flaked almonds, walnuts, coconut, dried apricots, even frozen blueberries (the blueberries made for a moister bar). I also like to chop up a few squares of good quality dark chocolate for a bit of a chocolate hit. These are particularly good straight out of the oven. So what are you waiting for?
