Tomorrow I am making roast potato chips to go with the battered fish and a steamed treacle pudding. Until then I can't think of anything else
Treacle Pudding Recipe
I know it is probably too warm in May to be having treacle pudding but yesterday I really wanted some comfort food. My go-to when I need a 'food hug' is treacle pudding. I've been making this for Sunday lunch since I was like 11 years old. In my house it's there one minute - gone the next comfort food. The great thing about the recipe I use is that there isn't any need for suet.
Ingredients:
110g self-raising flour
110g brown sugar
110g butter
2 eggs
2 large tbsp treacle
Method:
1.Beat together the butter and sugar until fluffy.
2.Add the 2 eggs and beat.
3.Sieve in the flour and stir until blended.
4.With butter, grease a pint sized bowl.
5.Put the 2 spoonfuls of treacle into the greased bowl and then pour the sponge mix on top.
6.Cover the bowl loosely with foil.
7.You can either cook the treacle pudding in a steamer for 20-30mins or use a stacking pan with steamer section - this will take 1hr30mins.
8.Serve with cream, custard or creme fraiche.
