| Tri Tip Crostini w/ Creamy Horseradish Sauce
Smoked Tri Tip Steak
A cheese steak sandwich made from tri-tip simmered in the slow cooker for hours is very tasty.
Life is pretty crazy right now. Instead of going out to lunch with my work buddies, I’m home hunkering down trying to do my part to “flatten the curve” due to the coronavirus. But hey when I am forced to stay home, it’s a great time to cook and make do with what’s in the house. So I put together a different type of chili. I usually make chili with kidney beans and ground beef. But today I didn’t even want to go the grocery store so I used pinto beans and left over tri tip.
I had a whole bag of pinto beans so made the entire bag in the instant pot by modifying What’s Gaby Cooking recipe. I sautéd an onion with garlic and a jalapeño. I added the beans, 6 cups water, a bay leaf, chipotle peppers in adobo sauce and a bit of veggie bouillon. Pressure cooked for 50 minutes and natural release and they were perfection. I added cumin, chili powder and salt after they were cooked.
In a pot I sautéed onions, peppers and garlic. I added the cooked tri tip, a can of tomatoes, 1/2 bottle of beer, and half the beans. Let that simmer and you’ve got a beautiful modified chili.
