This recipe for Baked Triscuit Crusted Cod is a tasty change from other baked fish dishes. Ingredients: 4 cod fillets. 1 cup crushed Triscuit crackers. 1/4 cup grated Parmesan cheese. 2 tablespoons melted butter. 1 teaspoon garlic powder. 1/2 teaspoon paprika. Salt and pepper to taste. Lemon wedges for serving.
Instructions: Get the oven ready by heating it up to 400F 200C. Crush Triscuit crackers and mix them with melted butter, garlic powder, paprika, salt, and pepper in a bowl. Place the cod fillets on a baking sheet that has been lined with parchment paper. Use paper towels to dry them off. Cover the top of each cod fillet with the Triscuit mix and press it down gently to stick. The crust should be golden and crispy after 12 to 15 minutes in a hot oven. The cod should be cooked all the way through. Warm it up and serve it with lemon wedges.
