BBQ chicken, quinoa, and a bunch of fresh vegetables make up this tasty and healthy salad. This salad was inspired by Iowa, and the BBQ sauce and ranch dressing give it a great new taste.
Ingredients: 1 cup cooked quinoa. 2 cups shredded cooked chicken. 1/2 cup corn kernels fresh or frozen. 1/2 cup black beans, drained and rinsed. 1/2 cup diced red bell pepper. 1/4 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup shredded cheddar cheese. 1/4 cup BBQ sauce. 2 tablespoons ranch dressing. Salt and pepper to taste. Lime wedges for garnish optional.
Instructions: In a large mixing bowl, combine the cooked quinoa, shredded chicken, corn kernels, black beans, diced red bell pepper, diced red onion, and chopped cilantro. In a small bowl, whisk together the BBQ sauce and ranch dressing. Pour the dressing mixture over the salad ingredients and toss to coat evenly. Add salt and pepper to taste. Adjust the seasoning as needed. Sprinkle shredded cheddar cheese over the top of the salad. Serve the BBQ Chicken Quinoa Salad chilled, garnished with lime wedges if desired.
