There's a plantation at the base of the volcano Mount Matutum, in the Municipality of Tupi, in the Province of South Cotabato, on the Island of Mindanao, in the Country Philippines, in the middle of some dang ocean somewhere. This is where Kablon Farms grows most of their cacao. The farm is run by the Pantua family. According to @uncommoncacao, the US importer, Kablon provides several beans with different fermentation profiles. kablonfarms.com shows they also sell jellies and coconut oil. The province is Southwest of the Davao provinces where Askinosie has been sourcing most of their cacao. That research showed that MARS (Inc) has sponsored cacao development in the Davao region, encouraging mixing cacao and coconut. I mention this because MARS also shows up in the deep history of Los Bejucos (DR) too. Rabbit Hole. The @solkiki_chocolatemaker 70% whacked me with one note - coffee bean. Rich, creamy, soft, delicious coffee bean. Coffee bean mocha comes to mind. The @whitelabelchocolate bar is a 74%, not visibile on their site, but is on the @mutarichocolate site. Still soft and creamy, the mocha profile is lighter, with a hint of fruit. Similar to a Wampusirpi experience, but less fudgy. I look forward to many more bars from them.
