Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1 cup light brown sugar, packed. 2 large eggs. 1 teaspoon pure vanilla extract. 2 cups all-purpose flour. 3/4 cup unsweetened cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon sea salt. 1/2 cup creamy peanut butter. 1 cup semi-sweet chocolate chips. 1 cup caramel bits. 1/4 cup heavy cream. Sea salt flakes for garnish.
Instructions: Preheat your oven to 350F 175C and line two baking sheets with parchment paper. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and 1/2 teaspoon of sea salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Using a cookie scoop or a spoon, drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the cookies are set but still soft in the center. Remove from the oven and let them cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely. While the cookies are cooling, in a microwave-safe bowl, combine the peanut butter, chocolate chips, caramel bits, and heavy cream. Microwave in 20-second intervals, stirring between each, until the mixture is smooth and well combined. Once the cookies are completely cooled, drizzle the peanut butter-chocolate-caramel mixture over the top of each cookie. Sprinkle a pinch of sea salt flakes on top for a finishing touch.
