Ingredients: 4 cups of beef or vegetable broth. 2 cups of water. 1 pound of beets, peeled and grated. 2 carrots, peeled and grated. 2 potatoes, peeled and diced. 1 onion, finely chopped. 2 cloves of garlic, minced. 1/2 cabbage, shredded. 1 can 14 oz of diced tomatoes. 1/2 cup of tomato paste. 1/4 cup of white vinegar. 2 tablespoons of vegetable oil. Salt and pepper to taste. Sour cream and fresh dill for garnish.
Instructions: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and saut until they become translucent. Stir in the grated beets and carrots and cook for about 5 minutes. Add the diced potatoes and shredded cabbage to the pot and continue to cook for another 5 minutes. Pour in the beef or vegetable broth, water, diced tomatoes, and tomato paste. Stir well. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30-40 minutes, or until the vegetables are tender. Add the white vinegar and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes, then remove from heat.
