Ingredients: 1 cup almond flour. 1/2 cup diced strawberries. 1/4 cup finely chopped mushrooms. 1/4 cup butter, softened. 1/4 cup honey or maple syrup. 1 tsp vanilla extract. 1/4 tsp salt. 1/4 tsp baking soda. Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine the almond flour, diced strawberries, chopped mushrooms, butter, honey or maple syrup, vanilla extract, salt, and baking soda. Mix well until all the ingredients are thoroughly combined. Using a spoon, scoop out portions of the cookie dough and place them on the prepared baking sheet. Flatten each portion slightly with the back of the spoon. Bake in the preheated oven for about 12-15 minutes, or until the edges of the cookies turn golden brown. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
