Thank you chef… You took me under your wing for many years and I am extremely grateful and honoured! As my culinary mentor you taught me the importance of choosing the right product, understanding where it came from and showing it full respect in the kitchen. You taught me importance of balancing flavours and textures, being true to classical dishes, “nothings better then a great roast chicken!” You had an eye for detail like no one else and would never settle unless completely satisfied. Amongst all you were extremely passionate, loved food and loved to cook. You had a humble approach on food which I admired. You were the greatest chef I knew and hardly went to high end restaurants. Most of our meals together in Hong Kong were local food stalls because that’s where you wanted to be, experiencing the local flavours and culture. The inspirations on the menu came from what we found in the wet market and the organic farms in the new territory… I was always proud to work for you and always thought that eventually we would be in the kitchen together again, I know we both did. People know you for being a great chef but to me and my family we knew you for being a great man as well. I am lucky to have had you in my life and will miss you dearly!
