Slow Cooker Pot Roast
I cobbled together a few tips/recipes from online, but a pot roast seems like a pretty standard/“do what you want” kinda thing. Here’s the ingredients I used (bolded what was on sale):
Boneless beef roast (can’t remember the cut I used...): $8.50
Vidalia onion: $0.68
Package of white mushrooms: $1.99
Can of low-sodium chicken broth: $0.50
Two sticks of celery: $0.00
My roommate bought celery and wasn’t going to use all of her bunch, whoo!
Fresh thyme and rosemary: $0.00
The last remnants of my dying patio garden thyme plant :P
Dried thyme, rosemary, salt, and pepper: $0.00
Already had
~1 tsp. olive oil: $0.00
Already had
I chopped the onion, washed and cut the mushrooms, and cut the celery, then combined with the fresh and dried herbs. I then rubbed olive oil and additional herbs/salt/pepper into the pot roast, then put it in the crock pot and dumped the chicken broth over it. I cooked on low overnight (~8 hours).
The total cost for this recipe was $11.67, and I got 4 servings out of it, meaning the total cost per serving was $2.91. Nice!
For an even tastier pot roast, you could sear the outside of the roast in a skillet before adding to the crock pot, but I am lazy, and I still think it turned out pretty tasty. :)
