🌱Tofu Fried Rice🌱

[Two servings]

🌱Ingredients:🌱 

1/2 cup cooked brown rice

1/2 cup peas and carrots

1/2 cup cubed, drained firm tofu

2 tsbps oil

1/4 large onion (or 1/8 of a cup chopped onion)

1 tbsp minced garlic + 1 tbsp soy sauce + 1 tbsp minced ginger

(optional) sesame seeds, 2 tbsp ketchup

🌱Directions:🌱

Heat oil in pan on medium-high heat. Saute the chopped onion until translucent. Add tofu. Fry until lightly browned.

Add pease and carrots and rice. Fry, stirring frequently, for about 10 minutes. 

Add garlic, ginger. Toss with sesame seeds and soy sauce. Add squirt of ketchup if desired. 

Serve. Enjoy! Feel free to add bamboo shoots, water chestnuts, broccoli, spring onion, bok choy, etc. to this.
