Mushroom varnishkes Comine 1 egg, 1/2 tsp salt, 1/4 tsp cayenne pepper, freshly ground black pepper, 1 C buckwheat groats. Cook 3 min in a hot skillet. Set aside. Combine 8 oz sliced mushrooms, 1 Tbl olive oil and 1 Tbl butter in skillet. Cook 8 minutes. Sprinkle with 2 Tbl lemon juice. Set aside. Combine 1 chopped onion, 2 diced celery stalks, 2 minced garlic cloves and 1 Tbl olive oil. Cook 5 minutes. Combine all ingredients together with 2 C vegetable stock and 1 tsp paprika. Bring to a boil. Reduce heat and simmer 5 minutes. Remove from heat, set aside. Allow 10 minutes for buckwheat to absorb liquid. Cook 1 C bowtie pasta. Drain liquid from pasta. Toss witb 1 Tbl butter. Add cooked groats and mix well. Garnish with 1/2 C finely chopped parsley or dill.
