Pesto & Geuze! Or at least my interpretation of a green pesto, not the 'real' thing. Better be clear about that before the Italian food community hunts me down 😉 Basil, Rucola, sage, pecorino, pine nuts, black pepper, salt, olive oil and a big splash of lime juice. A good match with a geuze, gueuze, oude geuze or gueuze a l'ancienne. In this case a Vat79 from Boon. Pesto & geuze. Herbal freshness, mild bitter, creamy moutcoating texture versus refreshing mild acidity and dry, palate cleaning aftertaste. A good match on paper and out of experience. The Vat79 was a bit too wood focused, heavy and even a tad too sweet though. Good beer, good dish, no match. No worries though, there's always next time.
