Ingredients: 2 cups gluten-free all-purpose flour. 1 cup coconut sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/2 cup unsweetened applesauce. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 2 cups diced apples peeled and cored. 1/2 cup chopped walnuts optional. 1 cup coconut cream. 1/2 cup coconut sugar. 1 tsp vanilla extract.
Instructions: Preheat oven to 350F 175C. Grease a 9x13-inch baking pan. In a large bowl, combine gluten-free flour, coconut sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir in applesauce, melted coconut oil, and vanilla extract until well combined. Fold in diced apples and walnuts, if using. Spread the batter evenly into the prepared baking pan. Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. While the bars are baking, prepare the caramel frosting: In a small saucepan, combine coconut cream and coconut sugar over medium heat.
