This recipe for carrot noodles in peanut sauce is a tasty and healthy alternative to regular pasta dishes. The creamy peanut sauce goes well with the sweet carrot noodles, making a delicious flavor combination.
Ingredients: 4 large carrots, spiralized into noodles. 1/2 cup peanut butter. 3 tablespoons soy sauce. 2 tablespoons rice vinegar. 1 tablespoon honey. 2 cloves garlic, minced. 1 teaspoon grated ginger. 1/4 cup water. 2 tablespoons sesame oil. 2 green onions, sliced. Crushed peanuts and cilantro for garnish.
Instructions: Use a whisk to mix peanut butter, soy sauce, rice vinegar, honey, garlic, ginger, and water in a bowl. This will make peanut sauce. On medium heat, warm up the sesame oil in a big pan. When you add the spiralized carrot noodles, cook them for three to five minutes, or until they start to get soft. Toss the carrot noodles in the peanut sauce to coat them. Add two to three more minutes of cooking. Put the carrot noodles in a peanut sauce and top them with chopped green onions, crushed peanuts, and cilantro.
