Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup whole milk. 1/4 cup sour cream. For Churro Topping:. 1/2 cup unsalted butter. 1/2 cup granulated sugar. 1 teaspoon ground cinnamon. For Dulce De Leche Frosting:. 1/2 cup unsalted butter, softened. 1 cup powdered sugar. 1/2 cup dulce de leche. 1 teaspoon vanilla extract. Pinch of salt. Additional dulce de leche for drizzling optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a medium bowl, whisk together the flour, baking powder, ground cinnamon, and salt. Set aside. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk and sour cream, beginning and ending with the dry mixture. Mix until just combined. Scoop the cupcake batter into the prepared muffin tin, filling each liner about two-thirds full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and allow them to cool completely on a wire rack. While the cupcakes are cooling, prepare the churro topping. In a small saucepan, melt the 1/2 cup of unsalted butter over medium heat.
