A rich and decadent dessert, this vegan hot fudge pudding cake is great for when you're craving chocolate. It will be a hit at any party because it has a moist cake layer on top and a gooey fudge sauce layer below.
Ingredients: 1 cup all-purpose flour. 3/4 cup granulated sugar. 2 tablespoons cocoa powder. 2 teaspoons baking powder. 1/4 teaspoon salt. 1/2 cup non-dairy milk such as almond or soy. 2 tablespoons vegetable oil. 1 teaspoon vanilla extract. 3/4 cup packed brown sugar. 1/4 cup cocoa powder. 1 3/4 cups hot water.
Instructions: Set the oven to 350F 175C and heat it up. Add the flour, granulated sugar, baking powder, salt, and 2 tablespoons of cocoa powder to a bowl. Use a whisk to mix the ingredients together. Mix the vanilla extract, non-dairy milk, and vegetable oil with the dry ingredients. Mix everything together well. Spread the batter out evenly in a 9-inch square baking pan that has not been greased. Put the brown sugar and 1/4 cup cocoa powder in a different bowl and mix them together. This mix should be spread out evenly over the batter in the baking pan. Spread the hot water out over the top. Don't stir. Bake the cake for 35 to 40 minutes, or until it's set and a toothpick stuck into the middle comes out clean. Warm up and serve. You can add vegan whipped cream or ice cream on top if you want to.
