Ingredients: 2 cups pumpkin puree. 1 cup medjool dates, pitted. 1/2 cup coconut milk. 1/4 cup coconut oil. 1 teaspoon vanilla extract. Pinch of sea salt.
Instructions: Put pumpkin puree, dates with the pits removed, coconut milk, coconut oil, vanilla extract, and a pinch of sea salt in a food processor. Blend the mixture until it is smooth. Move the mixture to a saucepan. Cook over medium-low heat, stirring all the time, for about 20 to 25 minutes, or until it thickens and has a caramel-like consistency. Put the caramel mix into a baking dish that has been lined with foil. Use a spatula to smooth the top. For at least two hours or until firm, put it in the fridge.
