Veg and cheese quinoa cakes 🥦🥕🧅🧀 I made these with Teddy a couple of days ago and thought I’d share the recipe as they went down well with both toddler and baby! They’re super healthy and packed full of veggie goodness 🌈 ~ 1/2 onion, finely diced 2 carrots, grated 1/2 head of broccoli, finely chopped 2 eggs 150g cheddar, grated 1 large handful frozen peas 200g cooked quinoa ~ Preheat oven to 200C/fan 180C and line a baking sheet with non stick baking paper. Drizzle some olive oil in a pan and sauté the onion, carrot and broccoli for 5 mins. Season with black pepper. In a large bowl, whisk the eggs, then stir in the cheese, frozen peas, quinoa, and cooked veg. Using a 1/4 cup or small ramekin dish, scoop out some of the mixture, pack it down, then gently tip on to the baking tray. Repeat with all the mixture. Bake for 10 mins then gently turn and bake for another 5-10 mins.
