Indulge in the classic taste of sugar cookies in bar form, perfect for a sweet treat any time of day. These vegan sugar cookie bars are soft, chewy, and topped with a simple glaze.
Ingredients: 2 cups all-purpose flour. 1/2 cup vegan butter, softened. 3/4 cup granulated sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1 cup powdered sugar. 2 tablespoons almond milk. Vegan sprinkles optional.
Instructions: Set the oven to 350F 175C and heat it up. Prepare a 9x13-inch baking dish by greasing it. Mix the vegan butter and sugar together in a bowl until the mixture is light and fluffy. The applesauce and vanilla extract should be mixed in well. Mix the flour, baking powder, and salt together in a different bowl. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Press the dough into the baking pan so that it's spread out evenly. For 20 to 25 minutes, or until the edges are just beginning to turn golden brown. Let the bars cool all the way down on a wire rack in the pan. To make the glaze, mix the powdered sugar and almond milk in a small bowl with a whisk. After the bars have cooled, drizzle the glaze over them and, if you want, top them with vegan sprinkles. Before cutting the bars into squares, let the glaze set. Have fun with your tasty vegan sugar cookie bars!
