Transform your regular waffles into churro-style delights with this easy recipe. These waffles are crispy on the outside and fluffy on the inside, coated in a sweet cinnamon-sugar mixture that will remind you of your favorite churros.
Ingredients: 2 cups all-purpose flour. 2 tablespoons granulated sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 2 large eggs. 1 3/4 cups milk. 1/2 cup unsalted butter, melted. 1 teaspoon vanilla extract. 1/4 cup granulated sugar for coating. 1 teaspoon ground cinnamon for coating.
Instructions: Preheat your waffle iron according to the manufacturer's instructions. In a large mixing bowl, whisk together the flour, 2 tablespoons of sugar, baking powder, and salt. In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Pour the batter onto the preheated waffle iron and cook according to your waffle maker's instructions until they are golden brown and crisp. While the waffles are cooking, mix 1/4 cup of sugar and 1 teaspoon of ground cinnamon in a shallow dish. As soon as the waffles are done, remove them from the waffle iron and immediately coat them in the cinnamon-sugar mixture. Make sure they are well coated on all sides. Serve your churro-style waffles warm, and enjoy!
