Tomato Basil Soup

Ingredients
• 4 large tomatoes, chopped, seeded and peeled • 1/3 cup basil leaves (should be fresh) • 4 cups tomato juice (opt for the low sodium variety) • 1 cup low-fat milk (1%) • ¼ tsp freshly cracked black pepper • ¼ tsp salt • ½ cup light cream cheese, softened • 1 tsp thinly sliced basil leaves • 8 diagonally cut slices of French bread
Instructions
• Transfer the tomato juice and the chopped tomatoes in a saucepan and bring the mixture to a boil. Reduce the heat and simmer the tomato mixture for 30 minutes; don’t cover the saucepan.
• Take a food processor or blender and put the tomato mixture you just prepared along with the basil leaves. Process, until you get a smooth puree.
• Pour the puree into a pan; add the milk, pepper and salt. Stir the ingredients carefully. Add the cream cheese; keep on stirring using a whisk.
• Cook the mixture over medium-to-low heat for around 5 minutes i.e. until it becomes thick. Your soup is now ready.
• Divide the soup into 8 bowls, top it with the sliced basil leaves and serve with French bread slices.
