Savory cauliflower waffles with perfectly fried eggs are a tasty and low-carb way to start the day or have brunch. The cauliflower waffles taste great and are crispy on the outside and soft on the inside.
Ingredients: 2 cups cauliflower florets. 1/2 cup grated Parmesan cheese. 1/4 cup almond flour. 2 large eggs. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. 2 eggs for frying. Cooking spray or oil for waffle iron and frying pan. Fresh herbs for garnish optional.
Instructions: Preheat your waffle iron according to manufacturer's instructions. Place cauliflower florets in a food processor and pulse until they resemble fine crumbs. Transfer the cauliflower crumbs to a clean kitchen towel and squeeze out as much moisture as possible. In a mixing bowl, combine the cauliflower crumbs, grated Parmesan cheese, almond flour, 2 large eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined. Lightly grease your waffle iron with cooking spray or oil to prevent sticking. Spoon the cauliflower mixture onto the waffle iron, spreading it evenly. Close the waffle iron and cook until the waffles are golden brown and crispy about 5-7 minutes, but this may vary depending on your waffle iron. While the waffles are cooking, heat a frying pan over medium heat and add cooking spray or a small amount of oil. Crack 2 eggs into the frying pan and cook to your desired level of doneness e.g., sunny-side up, over-easy, etc.. Carefully remove the cauliflower waffles from the waffle iron and place them on a serving plate. Top each waffle with a fried egg, garnish with fresh herbs if desired, and serve hot.
