A flavorful, quick, and simple dinner option is this stir-fried chicken and broccoli. A flavorful sauce, crisp veggies, and tender chicken combine to make a filling dinner in a matter of minutes.
Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, thinly sliced. 1/2 cup sliced carrots. 3 cloves garlic, minced. 2 tablespoons vegetable oil. 1/4 cup soy sauce. 2 tablespoons oyster sauce. 1 tablespoon cornstarch. 1 teaspoon sesame oil. 1/2 teaspoon red pepper flakes optional. Cooked rice, for serving.
Instructions: In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, and sesame oil. Set aside. Heat vegetable oil in a large skillet or wok over high heat. Add sliced chicken and stir-fry until cooked through, about 4-5 minutes. Remove from the skillet and set aside. In the same skillet, add minced garlic, broccoli florets, sliced red bell pepper, and sliced carrots. Stir-fry for 3-4 minutes or until vegetables are tender-crisp. Return cooked chicken to the skillet and pour the sauce over the ingredients. Stir-fry for an additional 2-3 minutes until everything is well coated and heated through.
