Ingredients: 2 cups all-purpose flour. 1/2 cup cocoa powder. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup unsalted butter, softened. 1 1/2 cups granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup buttermilk. 1 1/2 cups grated zucchini. 1/2 cup chocolate chips. 1/2 cup chopped walnuts optional. Powdered sugar for dusting optional.
Instructions: Grease a 9 x 13-inch baking dish and preheat your oven to 350 degrees Fahrenheit 175 degrees Celsius. Mix the flour, baking soda, baking powder, cocoa powder, and salt in a bowl. Put aside. Beat the softened butter and granulated sugar in a separate bowl until they become light and fluffy. One egg at a time, beat in, and then mix in the vanilla extract. Alternating with the buttermilk, add the dry ingredients to the wet ingredients in batches. Blend until barely combined. Add the chocolate chips, chopped walnuts if using, and grated zucchini. Evenly distribute the batter after pouring it into the baking dish. A toothpick inserted into the center should come out clean after baking for 30 to 35 minutes in a preheated oven. After letting the cake cool in the pan for ten or so minutes, move it to a wire rack to finish cooling. If desired, dust with powdered sugar. Cut, present, and savor!
