Croissants and Chocolate Croissants
Wherever I am in the world, and even when I’ve been dancing into the wee hours, I always watch the New Year’s Day Concert with the Vienna Philarmonic playing musical pieces by the Strauss family. I dream that one day I will be clapping along to Radetzky March, in the Musikverein! In the meantime, I waltz to the Blue Danube and clap in front of the telly. This year, I thought I could do so with a bunch of Croissants and Chocolate Croissants for, if the French perfected them, these beautifully flaky and buttery beauties are from Austria, originally. I wish you a very Happy New Year 2021, may it be as delectable and gleeful as the first bite of a warm croissant!
Ingredients (makes about 18 croissants):
300 millilitres/1 1/4 cup water
2 (7-gram/0.25-ounce) packets active dry yeast
500 grams/1.10 pounds strong white flour
50 grams/1.75 ounces caster sugar
1 1/2 teaspoon salt
300 grams/10.5 ounces cold unsalted butter
6 (20-gram/0.70-ounce) good quality dark chocolate bars
1 large egg, lightly beaten
Pour water into a small bow, and sprinkle in yeast. Let stand, about 5 minutes, until foamy.
In a large bowl, combine strong white flour, caster sugar and salt;give a good stir. With a wooden spoon, gradually stir in yeast mixture, until dough comes together. Tip dough out onto a lightly floured surface and knead, for a good 10 minutes. Shape into a bowl and place into a lightly oiled bowl. Cover with cling film, and chill in the refrigerator, 2 hours.
Place cold butter between two sheets of parchment paper, and bash thouroughly with a rolling pin, into a rectangle of about 20x15cm/7.85x5.90″. Chill in the refrigerator, 30 minutes.
Meanwhile roll dough out onto a lightly floured surface, into a large rectangle: about 40x20cm/15.75″x7.85″. Turn butter rectangle onto the centre of the dough and fold each side onto butter rectangle to wrap. Seal edges and fold in half in the centre. Wrap in cling film and chill for 30 minutes.
Roll into a large rectangle again, fold edges towards the centre to give the shape of a book, and fold on itself. Chill in the refrigerator, 30 minutes; Repeat rolling, folding and chilling a couple of other times, before wraping in baking paper and cling film. Chill overnight.
Line 2 baking trays with baking paper.
Remove croissant dough from the refrigerator, and roll out onto a lightly floured surface into a large rectangle: about 60x30cm/23.65″x11.80″. Trim edges and divide in the middle, into two strips. Cut out 6 to 7 triangles with equal sides from each strip (the one on the edges will have a straight side).
Seize both ends of the base between your fingers and stretch slightly. Gently roll from the base to the pointy end, tucking it underneath. Place on prepared baking tray. Repeat likewise with remaining triangles, including the straight-edged ones. For six of them, place a dark chocolate bar onto the base, and roll it in. At this stage, you can freeze some of the croissants if you want to keep some for later.*
Leave croissants to rise for an hour to an hour and a half, until doubled in size.
Preheat oven to 200°C/395°F.
Lightly beat the egg. Generously brush croissants with eggwash.
Place baking trays in the middle of the hot oven and bake, at 200°C/395°F, 15 to 18 minutes, until well-risen and golden brown.
Serve Croissants and Chocolate Croissants warm with coffee (you may make it an Einspänner Coffee!) or tea.
*If you freeze croissants, thaw at room temperature, then leave to rise, an hour before egg-washing and baking.
Went back for MOAR croissant icons and I noticed 1) la pomme de discorde on the countertop, 2) Joufflu's Surprised Pikachu face--yeah man, oh mood. (Do not call under any circumstances that sht a "croissant au chocolat", a croissant is named for its fcking crescent shape. Pick one side of the pain-au-chocolat/chocolatine civil war and hope for the best.)
