Pearls of Wisdom 🦪✨🍾 Since 1984, @villierawines has been making Cap Classique in the Cape. As innovators in their industry, various aspects of the winemaking process have been sustainable and solar powered. For a few years, Villiera has produced commercially successful Demi Sec for various clients. In 2022, they decided to add their own Demi Sec to their wine portfolio. Villiera Pearls of Nectar NV Cap Classique is a predominantly Chardonnay sparkling wine, made in the traditional method. The second fermentation in the bottle takes 6 weeks, in which time the magical bubble is formed. The string of tiny bubbles which form along the glass inspired the moniker, ‘Pearls of Nectar’. Lees contact takes place for an average of 18 months. The resultant Cap Classique has 38g/l of Residual Sugar, 11.5% alc and a pH of 3.15. With layers of sweetness, as inviting as birds and bees are to the indigenous flowers of Villiera, the balanced acid makes it a sip to savour.
