Undyne is incredibly egocentric, and cocky often resulting in her getting into conflicts with nearly every other monster daily. She is incredibly territorial of Waterfall going so far as to attack Sans immediately when he enters her domain. That said, she does make small exceptions for a few monsters such as Gerison, Alphys, and Papyrus. Her aggressive nature is told to Frisk by several Waterfall monsters, and the fear of her is visible by them as well as they cower in her presence. Even though she is kinder to Papyrus and Alphys than most, Undyne is not great with her emotions often using fighting or mockery is her unfortunate love language. She does however harbor genuine feelings for Alphys, but the pair have difficulty maintaining their love as Undyne cannot stay out of water long and Alphys can't get too cold/wet or she could die.
Undyne was extremely young during the war, and like many other monsters was turned during the outbreak caused by Asgore. Her parents had completely lost themselves to the hunger and attempted to consume her. Gerson's strong resilient body gave him fairly good control of his actions. He had little choice but to kill and burn her parents, she consumed both to honor their memory as Gerson had become her guardian.
Undyne was raised by Gerson who went on to become the Alpha of Waterfall. Gerson was a generous Alpha who would often give more food to the Waterfall monsters and Undyne rather than himself. Sadly this continued to the point that Gerson was slowly going mad from hunger forcing Undyne to once again kill a father.
This event would traumatize her to the point that she became cold and ruthless to nearly everyone around her. Undyne often questioned the rules of territory her venture into Hotland was frightening as the heat nearly killed her, and would have succeeded had Alphys not taken her back to Waterfall. Later she would find out how risky this was for Alphys as if her body temp gets too low she could potentially die.
The pair would become mates despite the potential of them accidentally killing one another. Later on when trying to enter Snow Den Undyne found herself ensnared in one of San's traps. He proceeded to mock her calling her 'danger noodle' mocking her lack of legs and her face before unceremoniously tossing her back into Waterfall.
After this event the pair continued to prank and annoy one another ranging from simple set ups to potential deadly traps. They both share similar thoughts on survival, and though both adamantly deny being friends the pair seem to genuinely enjoy each other's antics. Eventually Papyrus tries to sneak out of Snow Den in an attempt to make friends and is attacked by a pack of Temi. She finds them defending, and yet not attacking despite have a high enough attack to easily slaughter them.
After killing the Temi she tries to gauge their stats better and doing a SOUL check finds that the hunger virus isn't afflicting them right. Surprised she decides to learn more about them, and finds that their brother is Sans, that they dislike fighting, and that their simply lonely. Taking pity on them and impressed at their abnormality, she becomes their mentor teaching them to defend better, she tries occasionally to see if they'll let her show him to fight but they adamantly refuses each time.
When the Human appears in Waterfall she immediately begins hunting them and killing any monster who gets in her way...
If the Human chooses this route, it's not the easiest, Undyne is incredibly territorial, driven, and hides her feelings (opposed to Sans who simply has difficulty feeling due to his condition.) making things more challenging than other routes. Undyne will try repeatedly to impale them numerous times across their territory although if the Human listened to San's advice they find that Undynes aim is horrible. Her tracking abilities are also poor as she hunts mainly with thermal vision meaning all they have to do is stay cold enough to avoid detection.
As they try to avoid Undyne the Human will run into Monster Kid who went hunting only to become lost. Hungry, and weak they cannot muster the strength to fight anyone. The Human in this route will choose to give MK some of their food and in return due to his cold-blooded body he will hide them for the most part from Undynes thermal.
Eventually the pair enter a standoff and the human will have to lure Undyne out of the water towards hot land till the heat begins to become too much. Once she passed out from the heat, the human will tie her up before dragging her back into Waterfall. Upon waking the pair end up having a chat that leads to her realizing the Human is much like Papyrus and admires their control.
After they finish talking Undyne reveals that she has concerns about Asgore explaining that every alpha has to pay tribute so that he doesn't begin eating everything around him. The Human explains that their mission is to imprison Asgore and stop the false God so that their world can heal. Undyne laughs at their words in the beginning before slowly going quiet.
"Can a world like this heal? Can our SOULs actually be saved...if such things exist...you and Paps give me the hope that they can.."
After this Undyne tells them that they have her support, and like Sans insists that they get Alphys to talk about anime. Once Sans passes Judgment on them and they imprison Asgore, and stand up against Monarch Undyne as well as the other Alphas will appear decreeing they no longer worship him.
Undyne attends this moment in a suit made by Alphys to keep her from drying out. Like the others she stated that she has never once worshiped him, and demands he fix the world he made. She becomes upset when he laughs telling them the hunger won't just stop, and that truthfully Asgore was to blame as he could have declined the elixir. She is held back by both Alphys and Papyrus during the exchange, once gone the group begins planning to recruit others who are tired of the hunger, pain, and violence.
At the end it's revealed that Alphys and Undyne found a way to be together without killing each other accidentally. Undyne has become a swim instructor, and builds a shrine dedicated to Gerson the monster who became her father.
On this path the Human gets zero warning about Undynes aim, and tracking abilities making it more difficult to avoid attacks if they aren't sure what to expect. Also instead of offering MK some of their food, the Human will instead cut off MK's tail causing him to flee in fear. Its revealed later by Undyne that because of this MK was attacked by other monsters and consumed completely.
This is when the fight begins as Undyne tells the Human how much they've been dying to kill them after finding out about Papyrus's death. Then she tells them that while she understood the need to eat, cutting MK's tail off and throwing him to the wolves was shameful. As the fight progresses her attacks become more frantic, and her body begins to change into something more terrifying as the Hunger begins to cause her sanity to crumble with each blow.
Eventually she becomes consumed by the virus and her attacks become extremely unpredictable, and the last blow will cause her to snarl as she falls to the ground bleeding out. Her eyes black, expression unhinged as she crawls towards the human growling despite the blood pouring from her body. The Human will deal the final blow as Undyne gets close clutching onto their leg before saying.
" I am coming home mom ...dad ...Gerson... forgive me ... Alphys..."
