Ingredients: 2 cups all-purpose flour. 2 tablespoons sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 2 large eggs. 1 3/4 cups milk. 1/2 cup vegetable oil. 4 boneless, skinless chicken breasts. 1 cup buttermilk. 1 cup breadcrumbs. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. 1/2 cup maple syrup. 2 tablespoons hot sauce. Cooking oil for frying.
Instructions: In a bowl, mix the flour, sugar, baking powder, and salt. In another bowl, whisk the eggs, milk, and vegetable oil. Combine the wet and dry ingredients, stirring until just mixed. Preheat your waffle iron and lightly grease it. Pour the waffle batter into the iron and cook until golden brown and crispy. While waffles cook, marinate chicken in buttermilk for 30 minutes. Mix breadcrumbs, paprika, and cayenne pepper in a separate bowl. Remove chicken from buttermilk, coat in breadcrumb mixture. Heat oil in a deep pan to 350F 175C. Fry chicken until golden brown and cooked through. In a small saucepan, warm maple syrup and add hot sauce to taste. Serve crispy chicken on top of fluffy waffles, drizzle with sweet and spicy syrup.
